Proso Millet Salad

(Soaking for 6 to 8 hours is recommended before cooking)
Ingredients:
- 1 cup cooked proso millet
- 1 cup mixed vegetables (chopped: carrots, bell peppers, cucumber, onion)
- 1/4 cup fresh herbs (chopped: cilantro, mint)
- 1/4 cup lemon juice
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Cook the Millet: Cook the proso millet according to package instructions. Let it cool completely.
- Prepare the Vegetables: In a large bowl, combine the cooked millet with the chopped vegetables, herbs, lemon juice, olive oil, salt, and pepper.
- Toss and Serve: Toss the salad gently to combine all the ingredients. Serve immediately, or chill for later.
